
Pinot Nero Vigneti delle Dolomiti I.G.T.
Pinot Nero (Pinot Noir) is one of the few vines that grows well at high altitudes. Ours is coltivated with passion and respect among the woods of Valle dei Ronchi and is expressed in a wine that is elegant,balanced and long lasting.
Sensory profile: light ruby red in colour. On the nose it reveals all its aromas of blueberry, strawberry and raspberry; then evolves into spicy notes of tobacco and hay that continue to refine in the bottle.
Food pairings: first courses with tasty and decisive sauces. Goes well with red and white roasted and grilled meat.
Serving temperature: 17-18° C. Production zone: Ronchi di Ala (Trento) 820÷900 meters a.s.l.
Grape varieties: pinot nero 100%
Soil composition: complex and variable soil, mainly composed of calcareous and marly rocks.
Vineyard-growing systems and principal training forms: Guyot, with a plant density of 5,600 vinestocks per hectare; south west exposure.
Harvest: completely manual in 20 kilo trays, in the middle of September.
Vinification: the grapes are gently pressed, de-stemmed and placed in 25 litre cement tanks. Punching down the cap is manually done twice a day during the fermentation. After draining off, the wine is placed in oak barrells where the malolactic fermentation takes place. Maturation 10-12 months.
Conservation: in standing bottles when consumption is expected within a short time. Otherwise it is suggested to lay the bottle down at a temperature as close as possible to 16-18°C in the dark.
Bottle and content: bordolese bottle of 0,75 lt.
